A dry, medium-bodied sparkling wine with a fruity character

The history of the winery begins with Abel Bouché, a berry grower from the Champagne region, in the 1920s. Since 2010, the fourth generation, brothers Guillaume, Valentin and Paul Bouché, have been managing the winery and growing grapes on the 50ha fields. Pale yellow in appearance with a fine bubble stream, medium intensity. The aroma is of medium intensity, fruity and slightly floral, with hints of light ripe stone fruits and citrus fruits. In addition, dried apple, overripe apricots and roasted hazelnuts with butter bread. The taste is dry, medium-bodied and elegantly fruity. Feel overripe light stone fruits, apricots and yellow apples with citrus and some chalky minerality. The medium-long and fruity aftertaste is complemented by an autolytic taste nuance with a hint of roasted almonds and croissant. The base wine is fermented in stainless steel barrels at 18 oC degrees, the second fermentation and autolysis in the bottle using the traditional method lasts 60 months.
